  • 1 cup butter or margarine
  • 1 1/2 cup sugar
  • 1 egg
  • 1 cup pumpkin
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts
  • 2 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon Salt
  • 1 teaspoon soda
  • 1 teaspoon nutmeg
  • 2 teaspoon pumpkin pie spice
  • 1 package chocolate chips

Instructions
  1. Beat in egg, pumpkin, and vanilla
  2. Sift flour, baking powder, soda, salt, nutmeg, pumpkin pie spice
  3. Add nuts and bits.
  4. Mix
  5. Drop by the spoonful onto baking sheets
  6. Bake 375 degrees, 15 minutes

Skip Champion / Doris Spann cookbook Skip Champion; his dad was George Champion, he worked on the railroad in Como, Denver South Park and Pacific Railroad. Earned 5 cents per day. Owned cabin in Como. Is one of the men that got my dad to buy a cabin in South Park. First cabin was up the Selkirk. An old corrugated cabin. Cabin was on a mining claim. In 1958 (give or take) mom and dad bought the cabin just down from the school house in Como.
